“Until 2012, we used six liters of water for a liter of wine produced, then we created a project with the University of Tuscia and Sant'Anna di Pisa to collect rainwater from the square, the washing water from the cellar plus the sanitary ware, which are channeled to a point where there is a plant that purifies water with phragmites, which are the swamp canes that can be seen in all our ditches and that we have simply transplanted into a bed of gravel where the water flows slowly. Microorganisms and plants clean the water that ends up in a biolago four meters deep, where it is collected and always kept clean with phytopurification.”
